My name is Katie Henderson, and I am a nutrition student at California State University, San Bernardino.  I plan on becoming an RD after internship and pursuing this career.  After my internship, I plan on going into a specified graduate program to narrow my focus in the field of dietetics. 

In my spare time, I enjoy cooking, working out, and listening to music.  I, also, enjoy quality time with my fiance, family, and friends.  During this season in my life, I am also enjoying planning my wedding with my future husband.

Meal Plan Assignment

I completed this project in fall of 2012.  This project was to create a meal for a group of four, and have them grade the meal based on taste, appearance, texture, etc.

This project had many parts.  The first part, "Menu and Recipes" included what I was wanting to make for the project.  I decided to go with an Italian dish, because I wanted to make homemade pasta.

The second part was the "Shopping List."  This portion was to break down what I needed within all of my recipes and the prices so I would stay within my budget which was $30.

The third part was the "Timeline."  This was where I broke down how long it would take me to make each product.  This was useful on the day of the project, because I had looked into this in advance and knew exactly what I was doing at every moment.

The fourth part of the project was my "Report" of how the meal went.  I thought it went well, but if I were to do it again, I would put my focaccia in after all of my guests arrived, because I put it in too early and it was cold and tough by the time everybody arrived.

The last few documents are the pictures of my project.

I received an A on this project.  I learned that I can host a gathering and make some delicious food.

Nutrition Analysis

I completed this project in the winter of 2013.  I worked on this assignment for two months.  I went to a pregnant lady and asked her if I could assess her diet.  After she completed the 3 day food analysis, I created her an account on choosemyplate.gov and analyzed her diet on supertracker. 

I learned through this project that I love to analyze diets and help people become healthier through their diets and physical activity.  Also, I learned that I need to be careful when I am inputting the data into supertracker because it can make your information completely invalid. 

I received an A on this project, but if I were to do it again, I would be more specific on my recommendations so that she would have a specific goal to aim for.

The attached forms are the different sections of the project that I completed.  The first form "Nutrient Analysis Assessment Paper" is the overall assessment that I completed after everything was done.  Second, the "Form B Questionnaire" is the form that I completed to understand my client's lifestyle so I could fully assess her diet.  Third, the "Form C avg day" was her total calories per day, and then I calculated her average calorie intake combining those three days.  Last, the "Diet Analysis Worksheet" was to further analyze her diet in more detail with the specific foods that she consumed.

Second Diet Analysis

I did this project in the fall of 2013.  I enjoyed doing this project because it was another analysis of a diet.  This time around, it was much easier and it was interesting trying to decrease this patient's high fat diet.  I enjoy doing these and improving patient's lifestyles.

Recipe Adjustment Project

I completed this project in the fall of 2013.  During this project, I took a recipe and converted it according to the factor method or the percentage method.  This was a long process of changing volumes to weights.  I received a B on this project, and the reason why was because I did not add servings to the end of the percentage method.  That is what I would change if I were to do this project again.

Meal Planning Project

I completed this project in the fall of 2013.  This was a meal planning project where I needed to provide a basic menu and recipes.  I then needed to adjust these recipes to 40 servings/recipe.  The next step was to make a purchase order of all of the products that I needed including plates and cutlery.  After that, I estimated the amount of personnel that I needed.  The final step was to figure out how much nonfood items I needed (plates, napkins, cutlery, etc.)

I learned through this project that it is a difficult job to be a food manager.  There is a lot of paper work and math that goes a long with it.

Fat Project

I did this project in the fall of 2013.  I did this project for the dietitian that I work under at the hospital.  She asked me to do an educational piece for the cafeteria.  She told me to pick any topic that I was interested in and I decided on the different kinds of fat.  I split the project into three portions: saturated fat, unsaturated fat, and trans fat.  I put the information on a tri-fold board and added pictures that symbolized these types of fat.  I took this picture after the project had been used and stored for a few months so that is why the paper looks folded or messed up.

Abstract 1 and 2

I completed this project in the fall of 2012.  I received A's on both of these abstracts.  I would not have done anything different.  I learned how to write manuscript abstracts through this project.  This was beneficial because I wrote a manuscript in the spring quarter and I needed to write an abstract.  Thankfully, I knew how to do one because of this project.

I completed this project in the spring of 2013.  This was a group project that we worked on for two and a half months. 

Something that I learned through this project was that I need to learn how to communicate more effectively.  There should have been a contract for the project and a grading scale.  I am learning people have different work ethics and have different expectations for their grade, and in a group project everyone needs to do everything to the best of their ability.  So to avoid this situation in the future, I will be making a contract to make sure that the group members and I do our part.

Another thing that I learned was how to do graphs.  I was not able to do them efficectivly , but I am now able to do them.  I received an A on this project.

Product Development Project

I completed this project in the spring of 2013.  During lab, I worked on this project for 2 and a half months.  This project was to make a non-fat dessert and I chose to make non-fat brownies.  After I completed this project, I did a nutrient analysis of my product.

This was a difficult task and I had many failures and successes.  One of my failures was that I put too much cocoa in one of my batches and it ended up being bitter.  One of my successes was that it tasted just like a brownie and was delicious when it was hot.  However, when it cooled it became like plastic. 

I learned through this project that fat is a necessary ingredient to make products have the right texture.  Fat is not bad.  People just need to learn portion sizes.

I received an A on this project.  If I did this project again, I would try to make cookies instead.  This way, I would be more rounded.

Powerpoint Project

I completed this project in the spring of 2013.  This is a lecture that I did on microwaves.  I looked in my textbook to find the information to put this lecture together.  I received an A on this project.  If I were to do this project again, I would look at other sources instead of one source.  I learned through this project how to put a lecture together and it is not as easy as it appears.

Menu Project

I completed this project in the fall of 2013.  While completing this project, I tried to make a theme for the meal.  One meal was Mexican food, another was Italian, and so on.  Through this project, I learned that making a menu is much more difficult than it appears.  It is hard to not repeat food and to make a variety of choices so the consumers do not become bored with the menu.  I received an A on this project, and if I were to do it again, I would try to make the menu not repetitive.

Conversion of Weights to Volumes

I completed this project in the fall of 2013.  During this project, I took a sample menu and converted the weights to volumes.  This is harder than it appears, but throughout this quarter, I have become more proficient at doing this.  I know that this is important because there are a lot of different conversions in food service, and I need to understand how to do them.  I received an A on this project.

Case Study

I did this project in the fall of 2013.  This was a case study where I answered questions and performed math problems according to the questions asked.  I learned through this project that forecasting is very important and that it takes a lot of math skills to have one of these jobs. I received an A on this project, and if I were to do anything different, it would be to be more careful with my math calculations.

Alcohol Consumption on the Body

I did this project in the fall of 2013.  I completed this project for the dietitian that I volunteer for at the hospital.  She wanted me to do a piece on alcohol and how it breaks down in the body within the first hour.  I found pictures of the body parts that it affects and put labels next to that body part.  Then I described what was going on in the body at that point in alcohol digestion.  If I were to do this project again,  I would try to find a full body picture so it looked more realistic.
